Kale Salad with Roasted Almonds and Parmesan


I’ve never liked kale but this salad changed the game. When I was on the east coast with my boyfriend, his mom made the most amazing kale salad and I knew I had to recreate it. So of course right when I got home I asked her for the recipe. Here it is!


What you’ll need: 

1 bunch of kale

1/4 cup toasted almonds

1/2 cup parmesan

1/2 lemon

1 Tbsp Olive Oil

Remove the thick spines from the kale and then chop the dark green part of the leaves crosswise in about 1 inch strips.  Put in a bowl and put aside.

Toast slivered almonds in a dry frying pan on the stove top.  You have to keep stirring to prevent burning. Place to the side until after dressing the salad.



Juice half the lemon into a small bowl and mix with the olive oil. Dress the kale with this.

After dressing kale, add the parmesan and roasted almonds. Mix, serve and enjoy!
