Sweet Potato Fries are one of my favorite sides. Here is a healthy recipe with a yummy greek yogurt dip. Enjoy!
For the fries:
2 sweet potatoes
2 tbsp olive oil
Salt and Pepper, to taste
For the “aioli”:
1 cup greek yogurt
2 cloves crushed garlic
½ a lemon, squeezed
Salt to taste
Preheat oven to 400 F. Peel the two sweet potatoes. Cut the sweet potatoes in half and then half those halves. Cut sweet potatoes into thick pieces (thickness depending on preference).
Put sweet potatoes on a baking sheet and spread two tablespoons of olive oil over them. Place the sweet potatoes in the oven for 25 minutes- but flip the sweet potatoes at about 10 minutes.
While the sweet potatoes are baking, make the Greek yogurt “aioli”. Place the Greek yogurt, crushed garlic, lemon juice and a pinch of salt in a bowl and mix.
There you go—a delicious, healthy snack!
