Raspberry Gin & Tonic

My boyfriend and I were listening to the radio and heard a recipe for gin and tonics. We both love gin and tonics and became inspired. After hearing the story we headed directly to the store and decided to look for a fresh fruit to make an upgraded G&T and decided on raspberries.

Here’s my raspberry gin and tonic. It was so delicious and so refreshing. I started by making a raspberry syrup and adding the makings of a traditional G&T.

For the syrup:

1 ½ cups fresh raspberries

¾ cup sugar

¾ cup water

For the Raspberry G&T:

Raspberry Syrup (above)

1 shot gin

Tonic water

Ice cubes

Start by making the raspberry syrup. In a small pot, place the sugar, water and raspberries.  Place at high heat. When the mixture first bubbles turn to a low simmer and let simmer for 5 minutes.  Take off heat and let cool (will probably take about an hour). When cool, strain the mixture and set aside the syrup.

Once the syrup has been strained, you’re ready to make your gin and tonics! The first step is to add the raspberry syrup into a glass. One spoonful is a very strong gin and tonic and a very sweet drink will be three—add as much as you like. After, add several ice cubes. Then add the shot of gin. After that, fill the rest of the glass with tonic. Cut the lime and squeeze into the drink.

Enjoy! It is delicious!
