As I’ve said before, I have a thing for quinoa. I love experimenting with it in different ways and here’s one of my latest favorites, a quinoa burger. It’s great to throw on top of a salad or even on a hamburger bun with a side of kale chips!
What you’ll need for 6 small patties:
½ cup quinoa
1 large sweet potato
1/3 cup frozen peas
1 teaspoon thyme
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon pepper
1 cup planko bread crumbs
Boil a large pot of water and add peeled sweet potato. Let the sweet potato cook until very tender, about 30 minutes. Once ready, put sweet potato in a large mixing bowl and mash.
At the same time, put 1 cup quinoa and 2 cups water in a medium pot over high heat. When the water starts boiling, turn down heat and simmer until water is completely absorbed. Let sit.
Boil a small pot of water and add frozen peas for about 3 minutes until cooked. Put aside when done.
In a small bowl mix thyme, cinnamon, salt and pepper. Set aside.
Before putting the patties together, preheat the oven to 400 degrees.
In the large mixing bowl with the mashed sweet potato, add quinoa peas and thyme, cinnamon, salt and pepper. Once this is thoroughly mixed, put planko breadcrumbs in a medium bowl and set beside the large mixing bowl. Also have a greased baking sheet ready next to the bowls.
Create small patties in your hand and then gently coat them with planko breadcrumbs by placing them in the bowl containing breadcrumbs. Place on the baking sheet.
Once all 6 patties are on the baking sheet, place in the over for approximately 23 minutes total (but flip once after 10 minutes). After 20 minutes of baking, put oven on broil for the last three minutes to crisp up the patties.
Take the patties out, let them cool and enjoy!
I placed my patty on a bed of arugula (lightly dressed with olive oil and lemon) and sautéed peppers and onions on top. Was a delicious, light meal!
