You have to try this Watermelon, Feta and Mint Salad. It tastes so fresh and is a perfect side for an end of summer bbq. Enjoy!
Watermelon, Feta and Mint Salad
For the Salad:
1 small watermelon
4 tablespoons mint, chopped
1/2 cup feta
For the Dressing:
2 tablespoons red wine vinegar
3 tablespoons olive oil
1/2 teaspoon salt
In a small bowl, mix together the red wine vinegar, olive oil and salt. Put to the side.
Cut the watermelon into about 1 inch cubes and place into large bowl. Add mint and feta to the bowl.
Drizzle the dressing over the watermelon, mint and feta. Mix carefully. If wanted, place a little extra mint and feta on top as garnish.
